With Sari at the Lodge this year her famous Pumpkin Spice Granola was a hit with both guests and crew!

(The basic recipe is from Pinch of Yum)

 

6 cups oatmeal

1 cup dried coconut

1 cup sliced almonds

1 cup other nuts *

1 tsp salt

2 tsp cinnamon spice

 

1 cup olive oil

1 cup maple syrup

1 cup pumpkin (plain pumpkin puree)

 

*For other nuts use hazelnuts or walnuts but do not add until half way through the cook. Some nuts can burn if cooked to long.

Mix all dry , mix wet separately then add to dry and mix well. Spread on two cookie sheets and bake at 350 for 15 minutes, stir and bake for another 15 minutes. You may have to bake a little longer if it still seems a bit wet and depending how crunchy you like it.

After the granola has been baked and cooled add dried fruit:

3 cups total of dried fruit and raisins

1 cup each of golden raisins, currents and dried cranberries or any combination of your preferred dried fruit such as dried cherries

Adapt to what you like!

 

Store in a dry sealed container  or portion and put some in the refrigerator.    Amounts can be halved.
