Hakai Cookies With a Holiday Twist


Mix with a  Kitchen Aide or other heavy duty mixer or in a large bowl by hand.  Don’t over mix!

1 cup white sugar

1 cup brown sugar

1 cup butter

1 cup oil

1 egg

1 tsp vanilla

Cream together sugars and butter, then add vanilla, oil and egg an mix til will blended.

3 cups flour

1 tsp baking soda

1 tsp baking power

1 cup rice crispies

1 cup oatmeal

1 cup coconut

then add

1/2 cup each pistachios, dried cranberries, holiday chips (red,green,white chocolate chips).

Then start adding the dry ingredients. Add 1 cup at a time and mix after each addition, then do the same with the cranberries, pistachios and chips.


Scoop on to cookie sheet with a small ice cream scoop and back at 350 for 12 to 15 minutes.
